Sprouted Quinoa Salad
This recipe is one of Dianne's all time favourites and is a hit at any party or family gathering! Using Everspring Farms' organic sprouted quinoa makes this recipe super quick to prepare because sprouted quinoa cooks in half the time as regular quinoa! This is also a great recipe for weekly meal prep.
Prep time: 20 mins
Cook time: 10-15 mins
1 cup Everspring Farms' organic sprouted quinoa
1 2/3 cups water
3/4 cup chopped red bell pepper
3 tbsp chopped red onion
1/4 crumbled feta cheese
1/4 cup olive oil
2 tbsp lemon juice (freshly squeezed is the best!)
1 1/2 tbsp Dijon mustard
salt and pepper to taste
Bring the sprouted quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover and simmer until quinoa is tender and water has been absorbed, about 10 minutes. Set aside to cool. If you are in a rush (or just really hungry) put the quinoa in the freezer so it cools faster!
Once the sprouted quinoa is cool, mix in the chopped cucumber, red pepper, onion and the feta cheese.
Whisk together the olive oil, lemon juice, Dijon and salt and pepper in a bowl and pour over the salad
